Fala Gin
The Soutra Aisle, in Fala is an area which comprises of the remains of a medieval hospital and friary which served the poor for over 300 years. The intention was to authentically bottle the taste and character of the land whilst expressing the borders culture. The distillery is self-sufficient in the manner it uses locally sourced water from the fala flow and freshly picked botanicals from the local hedgerows and gardens. The concept was built around the preservation of the botanic and evidence of medical practice found at the site of the Soutra Aisle hospital. A hospital, which at the time sought to protect and preserve the lives of those who passed through its doors.
